The exact ratio is up to you. If you prioritize a more puckery pie, use mostly Granny Smiths and toss in a Honeycrisp and a Jonagold. If you like your apples to slump and soften, use mostly Golden Delicious with a Braeburn thrown in.

Is cornstarch or flour better for pie filling? ›

Cornstarch makes for a shiny, glossy filling. A little goes a long way because it has twice the gelling power of flour. Flour thickens nicely but leaves more of a matte finish. You'll need to use twice as much as you would with cornstarch.

What is pie filling enhancer? ›

Pie Filling Enhancer thickens fruit pie fillings the same way Instant ClearJel does. Its advantage is added ascorbic acid (which adds a bright, tart note), and superfine sugar, which prevents it from clumping. Pie Filling Enhancer is about half sugar, so you'll want to reduce the sugar in your recipe accordingly.

How do you stiffen a pie filling? ›

When thickening a fruit pie filling, there are several options to consider. Very often flour or cornstarch is used, but in certain instances tapioca, arrowroot and potato starch can also help achieve the desired consistency.

How can I improve my pie filling? ›

Enhance Flavor with Spices: Adjust the flavor with spices and seasonings. For apple pie filling, add cinnamon, nutmeg, or a pinch of cloves to achieve a homemade taste. Simmer the filling with these spices for a few minutes to meld the flavors.

Can you use brown paper bags instead of baking paper? ›

Caution: Never Use Paper Grocery Bags

Sometimes, someone may say just use a paper grocery bag instead of parchment paper. This is a very bad idea, because of the high likelihood of the bag catching fire in the oven. This can even happen with temperatures that are relatively low.

Can you use brown paper bags as baking paper? ›

Parchment paper is meant to withstand high temps up to 425 degrees. A paper bag is not.

Why do people put a slice of cheese on apple pie? ›

The cheese-apple pie connection traces back to England, where both cheddar and apple pie are said to have originated. In the 17th and 18th centuries, a dairy-based sauce often topped English pies, such as custard. Somehow, some folks decided to try out cheddar along the way, and the rest was history.

What can I use instead of cornstarch to thicken apple pie filling? ›

All-purpose flour is an easy substitute for cornstarch; in fact you may see recipes for thickening pie fillings or soups with either. You'll need 2 tablespoons of flour for every 1 tablespoon of cornstarch in a recipe.

What is the best thickener for apple pie filling that will be frozen after baking? ›

Instant ClearJel

It can tolerate a range of temperatures (and can even thicken fruit without any heat at all). It's used by many commercial bakeries because it works well with acidic ingredients, has a neutral flavor and creates clear, cloud-free fillings. Pies made with Instant ClearJel can also be frozen.

What is the ideal starch to use for thickening apple pie filling? ›

For my taste, tapioca starch is the best thickener for fruit pies. It sets at a lower temperature than corn starch, has no objectionable flavor like flour and it sets clear, so you can see the color of the fruit better. For stone fruit or berries, I toss in a couple of tablespoons when I macerate the fruit.

How do you keep apple pie filling from being runny? ›

Adding Thickener

A thickener prevents the filling from being too watery by adding a substance that will absorb some of the liquid that seeps out of the fruit. A small amount of thickener should not alter the flavor of your pie. Use cornstarch as a thickener.
